Sweet Red Pepper Sauce

3 tablespoons olive oil
3 large red bell peppers -- stemmed, seeded and chopped
2 large onions -- chopped
2 garlic cloves -- minced
salt and freshly ground white pepper to taste
2 tablespoons chopped fresh parsley

Heat the oil in a large, heavy skillet over medium heat. Add the peppers, onions, and garlic, and saute until the onion is golden, stirring to prevent burning, about 15 minutes or longer. Transfer to a blender or food processor and puree. Stir in the seasonings and parsley. Serve warm.

Yields about 1 1/2 cups (6 one-quarter cup servings).

The distinctive taste of sweet red peppers brings out the best in [favorites]... and grilled, broiled, or poached vegetables. This can be made one day ahead and refrigerated.
