Dijon Vinaigrette - Detox - 2g Carbs, Trace Fiber

 1 Tablespoon Dijon mustard
 2 Tablespoons fresh lemon juice
 1 garlic clove -- minced
 1 teaspoon chopped tarragon -- chervil, rosemary, or thyme
 2 Tablespoons extra-virgin olive oil
 1/2 medium zucchini -- peeled and chopped Salt and black pepper to taste


Combine all the ingredients and blend in a high speed blender until smooth.


MAKES 1/4 CUP (4 one-tablespoon servings)
