Avocado Wasabi Slaw - Detox - 13g Carbs, 4g Fiber

1 cup shredded red cabbage
1 cup shredded green cabbage
1 medium carrot -- peeled and shredded
10 radishes -- trimmed and cut into matchsticks
1/2 cup snow pea shoots -- (optional) about a handful
2 scallions -- chopped
1 cup Wasabi Avocado Dressing -- (see page 110)
Salt and pepper to taste
In a large bowl. toss all the vegetables together thoroughly with the dressing. Add salt and pepper to taste.
Serves: 4
Slaws are a great way to enjoy raw cruciferous vegetables. since shredding allows for easier marinating, which helps break down the cellulose for easier digestion and absorption of nutrients. This is my lazy, don't-feel-like-rolling-sushi salad.
Wasabi Avocado Dressing - Detox
2 ripe avocadoes -- halved, pitted, and peeled
1 tablespoon wasabi paste
1 scallion -- chopped
2 tablespoons fresh lemon juice
Salt and pepper to taste
Combine all the ingredients in a high-speed blender and blend until smooth.
MAKES: 1 CUP
