Oven Baked Parmesan Zucchini - 3.9g Carbs, 1.Dietary Fiber, 1.2g Sugar

A great alternative to deep fried zucchini.

4 each small zucchini
2 eggs
Cooking spray
2 Tbsp whole wheat flour
3 Tbsp grated Parmesan cheese
1 tsp ground oregano
1/2 tsp dried basil
1 tsp paprika
1/2 tsp garlic powder
1 cup olive oil
Preheat oven to 350 degrees F.
In large, resealable plastic bag, add flour, cheese, oregano, basil, paprika, and garlic powder.
In small shallow bowl, beat eggs.
Dip zucchini slices in egg to coat.
Place zucchini slices in plastic bag, zip closed, and turn to coat evenly.
Coat baking sheet with cooking spray. Arrange zucchini slices. Drizzle with olive oil.
Bake 7 to 8 minutes, until zucchini is lightly browned.
