This soup truly is a lifesaver for busy families! On days that we are occupied with homework
and sports until dinnertime, I can mix this together in a flash and put everything in the slow cooker before picking the boys up from school When we arrive home at dinner time, there's a warm meal waiting for us to enjoy. If I am making this soup in the spring or summer, lemon is a great way to finish the soup; when it is cold outside I reach for the hot sauce!

High fiber - vegetarian - kid-friendly

 

1 onion, finely diced
1 (14.5 oz can) diced tomatoes, juice included
1 (6 oz can) tomato paste
1/2 cup celery, diced
2 cups carrots, shredded
1 cup brown lentils
1 Tbsp Italian Herb Seasoning *recipe below
1/2 lemon, juiced OR 3 drops hot sauce

 

1. Place the onion, tomatoes, tomato paste, celery, carrots, lentils, and herb seasoning in the slow cooker. Add 5 cups water.


2. Set the cooker on low and slow cook for 4 hours. Just before serving add a squeeze of lemon juice or a few drops of hot sauce to the soup.

Forget buying packets of seasonings. They're expensive and often full of salt. Save sodium and money by making this easy herb blend. Use it in sauces, soups, stews, on meats... anywhere you want to add Italian flavor without fat or sodium!

Makes: about 1/4 cup

Servings: 4

 

1 Tbsp Mediterranean oregano, dried
1 Tbsp basil, dried
1 Tbsp sage, dried
1 tsp rosemary, dried
1 tsp red pepper flakes


Combine spices in a mixing bowl. Store in an airtight container away from direct sunlight for up to six months. Before using, crush herbs between your fingers to release more flavor.
