VM Mediterranean Soup - 7.3g Carbs, 3.6g Fiber, 1.9g Sugar

2 cups (480 ml) filtered water
3 (120 g) celery stalks, quartered
1 sprig oregano
1 sprig thyme
1 (120 g) red bell pepper, seeded and stemmed, cut into chunks
1 (200 g) avocado, halved, pitted, peeled
1 (300 g) cucumber, cut into chunks
1 (10 g) jalapeño
1 (67 g) lime, peeled, halved
3 cups (90 g) spinach
1. Place water, celery, oregano, thyme, red pepper, avocado, cucumber, jalapeno, and lime into the Vitamix container in the order listed and secure lid.
2. Select Variable 1.
3. Turn machine on and slowly increase speed to Variable 10, then to High.
4. Blend for 10 seconds, using the tamper to press the ingredients into the blades.
5. Once mixture begins to circulate and head room is created at the top of the machine, stop machine and remove lid.
6. Add spinach leaves and secure lid.
7. Select Variable 1.
8. Turn machine on and slowly increase speed to Variable 10, then to High.
9. Blend for 30 seconds.
10. Enjoy with dulse leaves or flakes.
This recipe can be reduced by half and made in smaller containers.
This recipe has been written for the Vitamix 5200 with Standard 64-ounce container. If you are using a different Vitamix machine or container size, you may need to make adjustments to the Variable Speed, processing time, and/or ingredient quantities.
