Scallion, Raisin and Turmeric Sauce over Linguine - Linguine con lo Scalogno e Curcuma

8 tablespoons unsalted butter -- (1 stick)
6 scallions -- thinly sliced (white part only)
1/2 cup raisins -- soaked in tepid water
1/4 cup heavy cream
1 tablespoon turmeric
salt and freshly ground pepper to taste
To finish: -- olive oil for the pasta water
-- 1 pound linguine
-- freshly grated Parmesan cheese
Melt the butter with 2 tablespoons of water in a large frying pan on very low heat; be careful not to let it brown. Add the scallions and saute, stirring often, for 5 minutes or until the scallions are golden. Drain the soaked raisins, add them to the frying pan with the scallions, and saute another 2 minutes. Stir in the cream, turmeric, a few tablespoons of hot water, and salt and pepper to taste. Mix well and cook for about 3 minutes to bring the flavors together.
Meanwhile, bring a large saucepan of water to a boil. Stir in a small fistful of salt and a splash of olive oil. Add the linguine and cook, stirring often, until the pasta is al dente. Lift the linguine out of the water with a spaghetti strainer and put it directly into the frying pan for 1 or 2 minutes to warm through. Transfer the pasta to a serving bowl, sprinkle with Parmesan cheese, and serve immediately, with Parmesan on the table.
Serves 6.
Turmeric is one of the many ingredients that came to us from Tunisia. We like it both for the color and flavor and think of it as the poor people's saffron.
Tip: Butter will never burn if you add a little water to it.
