Mushroom and Walnut Sauce

3 tablespoons butter
1 tablespoon minced onion
2/3 cup sliced mushrooms -- (2-oz)
2 tablespoons flour
2 cups half and half -- scalded (heated just until bubbles form around edges of pan)
1 tablespoon Dijon mustard
1 tablespoon chopped fresh thyme -- or 1 teaspoon dried
1/4 cup chopped toasted walnuts
salt and freshly ground pepper to taste
Heat the butter in a medium-size, heavy saucepan over medium heat. Add the onion and mushrooms and saute until the onion is transparent, about 5 to 8 minutes. Stir in the flour, then add the half and half, stirring until smooth. Add the mustard and cook until thickened, about 10 minutes, stirring occasionally. Add the thyme and walnuts and season well with salt and pepper.
Yield: about 2 cups.
