Green Tomato Chow Chow

6 pounds green tomatoes -- unripened
2 cups chopped green bell peppers -- seeded
2 cups chopped red bell pepper -- seeded
2 cups finely chopped onions
2 red chili peppers -- finely chopped
2 cups finely chopped cabbage
5 tablespoons kosher salt
1 quart cider vinegar
3 cups sugar
1/2 cup mustard seeds
1 tablespoon celery seeds
1 tablespoon whole allspice
1 teaspoon ground turmeric

Remove a thin slice from the stem and blossom ends of the tomatoes and discard. Chop the tomatoes very fine. Combine with all of the vegetables and the salt and toss. Place in a stainless-steel or glass bowl. Press plastic wrap on the surface and put a plate on top to weight the vegetables and help bring out their juice. Place in the refrigerator overnight.

The next day, strain the solids, pressing the liquid out. Discard the liquid.

Combine the vinegar, sugar, and remaining spices in a large nonreactive saucepan. Bring to a simmer. Add the vegetables and cook for 10 minutes. Cool.

Makes 8 pints (64 one-tablespoon servings).

Chow chow can be refrigerated for 1 month. If you wish to can the chow chow, place into sterilized jars, follow the manufacturer's instructions, and process in a boiling water bath for 15 minutes. Chow chow served with cornbread, sweet potatoes, long-cooked greens, and roast (favorite) is the way to celebrate the bounty of the garden come winter [or Thanksgiving] in the Deep South or in the North.
