Ginger Glaze

1 tablespoon instant coffee
1/2 cup dry white wine
1/2 cup firmly packed dark brown sugar
1 teaspoon ground ginger
1/2 teaspoon Dijon mustard

Beat together all the ingredients. Simmer over low heat for 5 to 10 minutes. While the glaze is still warm, brush it over meat during the last 15 minutes of grilling to prevent the sugar from burning.

Yield: about 1 cup.

Brushing this over roast [favorite], grilled [favorite], or baked [favorite] produces a wonderfully spicy sweet glaze. This mixture can be stored in the refrigerator for up to three days. Rewarm it over low heat before using.
