2 large ripe red tomatoes -- coarsely chopped
1 bunch fresh basil -- large bunch, chopped
1 teaspoon dried thyme
1 pinch cayenne pepper
3 cups extra virgin olive oil
Place all the ingredients in a large bowl. Cover and set aside for 24 hours. Strain, and refrigerate in an airtight container for up to 1 month.
Makes 12 servings (one-quarter cup servings).
