Stewed Cucumbers and Tomatoes - 19.8g Carbs, 3.8g Fiber, 4.8g Sugar

2 Tbsp canola oil
3 cloves garlic, chopped
1 cup onion, chopped
1 red pepper, seeded & chopped
4 (301 g) cucumbers, peeled, seeded & coarsely chopped (cucumber+(8-1/4"))
2 cups ripe tomatoes, chopped
1/4 tsp sugar
Salt
Pepper
1 tsp fresh lime juice
1/4 cup scallions, chopped

In a large saucepan; heat oil over medium heat. Add garlic, onion and
red pepper,. Saute until just tender. Add cucumber, tomatoes, sugar,
salt and pepper to taste. Stir well. Bring to a simmer and cook until
cucumbers are just translucent. Add lime juice and scallions. Serve
as a side dish or over cooked rice.
