Asian Turkey Lettuce Wraps - 4.9g Carbs, 1.4g Fiber, 2.2g Sugar

Cook Time: 5 hours on low, 3 hours on high
Servings: 6 - 8

2 lbs lean ground turkey
1 Tbsp coconut oil
1 tsp garlic, minced
1 tsp fresh ginger, grated
2 large carrots, grated
1 onion, minced
1 1/2 cups low sodium chicken broth
1 Tbsp coconut aminos
1 tsp rice vinegar
1 tsp sesame oil
1 head iceberg lettuce
Green onions, chopped

Heat the coconut oil in a skillet over medium high heat and add the
garlic and ginger. Cook for 1 to 2 minutes before adding the ground
turkey. Cook until browned, stirring often, about 4 to 5 minutes.
Spoon the turkey into the slow cooker and add the remaining ingredients except for the lettuce and green onions. Cover and cook on low heat for 4 1/2 to 5 hours or on high for 2 1/2 to 3 hours until the turkey is cooked through. Turn off the heat and spoon the mixture into lettuce cups. Serve garnished with chopped green onion.
