Cook Time: 7 hours on low OR 5 hours on high

1 1/4 lb boneless chicken, chopped
1 small head cauliflower, chopped
1 Tbsp coconut oil
2 tsp garlic, minced
1 onion, chopped
1 stalk celery, chopped
1 tsp dried oregano
1 tsp dried thyme
Pinch cayenne
4 cups low sodium chicken broth
Heat the coconut oil in a skillet over medium-high heat and add the garlic. Cook for 1 minute then add the chicken. Cook until the chicken is browned, about 3 to 5 minutes, stirring often. Spoon the chicken into the slow cooker and stir in the rest of the ingredients. Cover the slow cooker and cook on low heat for 6 t6o 7 hours or oh high heat for 4 to 5 hours until the chicken is cooked through and the vegetable tender.
