Smoked Salmon Scramble - 1g Carbs, 0g Fiber

Next time you want to treat your brunch guests (and yourself!) to
something really special, try infusing a dish with luxurious smoked
salmon. Our delicious Smoked Salmon Scramble, perfectly seasoned
with fresh chives, is ready from start to finish in just 10 minutes.

Cook Time: 5 min
Total Time: 10 min
Servings: 2

1 teaspoon canola oil
3 large eggs OR 2 large eggs and 2 large egg whites, lightly beaten
1 oz fish, smoked salmon cut into thin strips
1 oz cream cheese, reduced-fat cut into 1/4-inch pieces
1 Tbsp chives, fresh finely chopped
Black peppercorns, (optional), freshly ground

1. Heat oil in a nonstick skillet over medium-high heat for 1 to
2 minutes. Add eggs and allow to set, 10 seconds. Sprinkle salmon,
cream cheese, and chives over eggs. Scramble until just cooked, about
1 minute, being careful not to overcook. Season to taste with pepper,
if desired. Serve hot.
