Three Bean Salad - 24g Carbs, 5g Fiber, 6g Sugar

PREPARATION TIME: 20 minutes
CHILL TIME: 1–2 hours
MAKES 16 servings

2 (14.5oz cans) green beans, drained
2 (16oz cans) garbanzo beans, drained
2 (16oz cans) kidney beans, drained
2 cups green peppers, thinly sliced
2 cups sweet yellow onion, thinly sliced
1 cup scallions, chopped
2 Tbsp minced garlic
1/3 cup olive oil
1 1/3 cups apple cider vinegar
1/4 cup SUN CRYSTALS All-Natural Granulated Blend
2 packets Italian dressing mix

1. DRAIN beans and place in a large mixing bowl. Add peppers, onion,
scallions and garlic.

2. WHISK oil, vinegar, SUN CRYSTALS Sweetener, and salad dressing
mix together. Pour over beans, stirring to coat.

3. REFRIGERATE covered, 1-2 hours or until ready to serve. Stir
occasionally.

MAKES 16 servings
