Fresh Fruit Pizza - 26g Carbs, 2g Fiber, 14g Sugar

Fresh berries and creamy yogurt make this pizza anything but garden variety.

PREPARATION TIME: 30 minutes
COOK TIME: 20–25 minutes
CHILL TIME: 2 hours
MAKES: 2 (12-inch) pizzas, 24

--> Cookie Crust
1/2 cup SUN CRYSTALS All-Natural Granulated Blend
1/2 cup margarine
1/4 cup light cream cheese
1 egg
2 1/4 cups all-purpose flour, separated
1 large egg white
2 tsp vanilla extract
2 tsp lemon zest (optional)
1 tsp baking powder
1/2 tsp baking soda
1/8 tsp salt

--> Fruit Topping
3/4 cup raspberry or strawberry jam
4 cups thinly sliced strawberries
2 cups raspberries
2 cups blueberries
2 cups blackberries
Vanilla yogurt (optional)

1. CREAM SUN CRYSTALS Sweetener, margarine, and cream cheese in a
medium-size mixing bowl. Add egg and mix well. Add 1/4 cup flour and
mix until just moistened. Add egg white, vanilla, and optional lemon
zest. Mix briefly. Add remaining ingredients and stir until blended.

2. REFRIGERATE dough 2 hours or until slightly firm.

3. PREHEAT oven to 350 degrees F.

4. ROLL half of the dough out about 1/4-inch thick and into a 12-inch
circle. Place in a 12 inch pizza pan or cake pan. Repeat for the
remaining dough.

5. BAKE cookie crust 20–25 minutes or until lightly golden around
the edges. Cool 15–20 minutes before placing fruit on top.

6. SPREAD 1/4 cup jam over the top of each cookie crust. Arrange berries
in a decorative fashion on top. Heat remaining jam to melt. Brush over
fruit to glaze. Drizzle with vanilla yogurt on top if desired.
