Balsamic Fig and Caramelized Onion Tapenade - 6g Carbohydrate; 1g Dietary Fiber

1 tablespoon olive oil -- PLUS
1/3 cup olive oil
1 medium red onion -- chopped
1 cup chopped Black Mission figs
1/4 cup balsamic vinegar -- plus 2 tablespoons
Salt and freshly ground pepper
1 teaspoon honey -- to 2 teaspoons (optional)

Heat 1 tablespoon oil over medium heat. Saute the onion until soft and beginning to brown, about 4 minutes. Add the figs and the 1/4 cup balsamic vinegar and continue to saute until most of the liquid is gone and the mixture is slightly caramelized, 2 to 3 minutes.

Transfer the fig mixture to the bowl of a food processor. Add the remaining 2 tablespoons vinegar, season with salt and pepper, and add the honey (if using). Pulse until the ingredients start to come together. With the machine running, gradually stream in the remaining 1/3 cup olive oil and pulse until a coarse paste forms.

Makes about 1 1/3 cups (10 two-tablespoon servings).

With a subtle sweetness and jammy quality, this tapenade is great with grilled pork. If you like more sweetness, add honey.

SERVING SUGGESTIONS:
1. Serve over grilled [Favorites}
2. Spread a thick layer on crostini and top each toast with a teaspoon of blue cheese. Add a sprinkle of walnuts, if you like.
3. Use as a condiment for a panini.
