1 1/2 cups pitted green olives
1 garlic clove -- to 2 cloves
1 orange -- zest only
1 lemon -- zest only
2 teaspoons fresh lemon juice
1 tablespoon chopped fresh parsley -- flat-leaf or curly
1/2 teaspoon chopped fresh rosemary
1/2 teaspoon fennel seeds
1 small dried red chile pepper -- crushed
2 tablespoons olive oil -- to 3 T.
salt and freshly ground pepper to taste
Place the olives, garlic, orange and lemon zests, lemon juice, parsley, rosemary, fennel seeds, and red chile in the bowl of a food processor and pulse until the mixture starts to come together. With the machine running, gradually stream in the olive oil and mix until a coarse paste is formed. Season with salt and pepper.
Makes 1 cup (8 two-tablespoon servings).
Mouth-tingling citrus melded with the other ingredients in this tapenade makes for fa potpourri of flavors that fill the mouth with a bang.
