Dried Cherry Tapenade - 18g Carbohydrate; 2g Dietary Fiber

4 tablespoons olive oil
3 tablespoons chopped shallots
1 cup dried cherries
5 tablespoons red wine vinegar
2 teaspoons brown sugar -- to 3 teaspoons
1 teaspoon dried ground ginger
1/2 cup chopped pecans
1 teaspoon fresh lemon juice
salt and freshly ground pepper to taste

Heat 1 tablespoon of the oil over medium heat. Saute the shallots until they begin to brown, 2 to 3 minutes. Saute the shallots until they begin to brown, 2 to 3 minutes. Add the cherries and 3 tablespoons of the vinegar and cook until softened. Turn the heat to low and add the brown sugar and ginger, stirring until the sugar is dissolved and well incorporated.

Transfer the cherry mixture to the bowl of a food processor. Add the remaining 3 tablespoons oil, the remaining 2 tablespoons vinegar, the nuts, and lemon juice. and blend until a paste forms. Season with salt and pepper. Add 1 or 2 tablespoons of water, as needed, to thin the tapenade to a spreadable consistency.

Makes about 1 cup (8 two-tablespoon servings).

Dried cherries have a tart-sweet flavor that is a nice change from the more commonly used dried cranberries. Because this is made with dried fruit, it's always easy to find the necessary ingredients, making it a perfect go-to recipe year-round. You will get variation in the tartness and sweetness of this recipe depending on the cherries you use. Adjust the amount of brown sugar accordingly.

SERVING SUGGESTIONS:
Use as a condiment on a roasted turkey sandwich.
Coat thickly on crostini and top with Brie, goat cheese or blue cheese.
