7 2/3 ounces pitted kalamata olives -- drained and rinsed (about 1 1/4 cups)
1 large garlic clove -- minced
1 1/2 cups packed fresh mint leaves
1/4 cup pine nuts
1/4 cup feta cheese
3 tablespoons olive oil
1 tablespoon fresh lemon juice
Freshly ground pepper to taste
Place all the ingredients in the bowl of a food processor and pulse until a coarse mixture forms.
Makes about 1 3/4 cups (7 one-quarter cup servings).
This tapenade is reminiscent of a fattoush salad, a common Syrian and Lebanese dish using garden vegetables, pieces of pita, and many of the ingredients in this recipe.
SERVING SUGGESTIONS:
1. Spoon over grilled [favorites].
2. Serve simply with breadsticks.
3. Thin with more olive oil and lemon juice and use as a tasty salad dressing; serve with romaine lettuce, onion, cucumber, tomato, and crumbled pita crisps or croutons. add more mint to taste.
