Edamame Hummus Spread - 12g Carbohydrate; 4g Dietary Fiber

Amount Measure Ingredient -- Preparation Method

1 cup edamame -- cooked and shelled
1 tablespoon tahini -- sesame seed paste
1 tablespoon pickled ginger
juice of 1 lime
juice of 1 small lemon
3 tablespoons olive oil -- to 4 T.
1/2 dried chile pepper -- crushed (to 1 dried chile pepper)
salt and freshly ground pepper to taste

Place all the ingredients in the bowl of a food processor and blend until almost smooth.

Makes about 1 cup (4 one-quarter cup servings).

Edamame, fresh soybeans, are th base for this healthful yet tempting spread. For a fun evening, hot a Japanese-inspired dinner party and prepare this recipe as an appetizer. Pickled ginger is available in the international food aisle of most grocery stores.

SERVING SUGGESTIONS:
1. Serve with crudites.
2. Use as a dip.
3. Spread on crostini.
