Sun-Dried Tomato Chevre Cheese Hummus Spread - 7g Carbohydrate; 1g Dietary Fiber

1/2 cup sour cream -- light or regular
4 ounces sun-dried tomatoes, oil-packed -- drained
1 garlic clove -- to 2 cloves, minced
4 ounces chevre cheese -- soft goat cheese
1 tablespoon milk -- to 2 T.
1 tablespoon chopped fresh basil -- or chives
salt and freshly ground pepper to taste

Place the sour cream, sun-dried tomatoes, garlic, and chevre in the bowl of a food processor and mix until the ingredients start to come together. Gradually add the milk, as needed, until a creamy consistency forms. Fold in the basil. Season with salt and pepper.

Makes about 1 1/4 cups (5 one-quarter cup servings).

This is a crowd-pleaser that's great to have on hand for a last-minute gathering. The vibrant orange hue adds festivity to any party. I serve this on Holloween wit black-bean chips and blue-corn tortilla chips - the colors fit perfectly with the pumpkin and bat decorations!

SERVING SUGGESTIONS:
1. Serve as a dip with tortilla chips and/or crudites.
2. Use as a condiment in roll-ups. Slather on softened lavash bread or tortillas, add [favorites]. Roll up and slice into pinwheels.
3. Top broiled or poached [cFavorite] with this spread.
4. Spoon over grilled [4Favorite].
