MAKES: 12
1 1/2 cups wheat bran
1/4 cup SUN CRYSTALS All-Natural Granulated Blend
1 cup all-purpose flour
1/2 tsp baking soda
1 tsp baking powder
1/4 tsp salt
1/2 tsp cinnamon
3/4 cup low-fat buttermilk
1/4 cup vegetable oil
1 large egg
1/4 cup unsweetened applesauce
1/2 tsp vanilla extract
1/2 cup raisins
1. PREHEAT oven to 400 degrees F. Spray muffin pans lightly with non-stick spray or line with baking cups.
2. MIX bran, SUN CRYSTALS Sweetener, flour, baking soda, baking powder,
salt, and cinnamon together in a medium-size mixing bowl. Set aside.
3. WHISK buttermilk, oil, egg, applesauce, and vanilla together in a
small mixing bowl. Add flour mixture and stir well. Fold in raisins.
4. SCOOP batter into muffin pans.
5. BAKE muffins 1215 minutes or until firm to the touch.
MAKES: 12
