Beautiful Beet Tapenade - 3g Carbohydrate; 1g Dietary Fiber

1 1/2 cups chopped beets -- about 8 ounces, roasted, steamed or boiled (not canned)
1/2 cup chopped walnuts
2 tablespoons balsamic vinegar
1 tablespoon olive oil
1/2 teaspoon salt -- plus more as needed
freshly ground pepper

Place all the ingredients in the bowl of a food processor and blend to a coarse but spreadable paste. Season with more salt and pepper as desired.

Makes about 1 1/3 cups (10 generous two-tablespoon servings).

The eye-catching color alone makes this recipe worth whipping up! The sweet yet earthly flavors will surprise you.

SERVING SUGGESTIONS:
1. Spread over crostini with goat cheese.
