That's been my take on paleo eating too. People take "paleo" to mean
"meat only", or "extremely low carb", but there are very few cases where
that is actually true, esp. in warmer climates. Human beings have
a limit on how much protein they can actually assimilate per day,
whereas the amount of fat and carb can be highly variable.

But what gets lost in the talk usually is the TYPE of carb and fat:
tubers can have a lot of polysaccharides and be extremely high
in nutrients (sweet potatoes are actually rather healthy!). And
"fat" can be essential or toxic (trans-fat).
