6 cups warm water
3/4 cup couscous
5 tablespoons butter
salt and freshly ground pepper to taste
1 pinch saffron
1 1/2 teaspoons ground aniseed -- (anise seed)
1/4 cup finely chopped fresh cilantro
Place all ingredients, except aniseed and cilantro, in a saucepan and
bring to a boil. Cook over medium heat for 3 minutes; then stir in aniseed
and cilantro and serve immediately.
Serves 6 - 8.
If soup is not served immediately, the texture and taste will change.
