Palestinian Zucchini and Yogurt Dip - Koosa ma'Zanjabeel

1 pound zucchini
1 cup yogurt
2 cloves garlic -- crushed
1/2 cup tahini
2 tablespoons lemon juice
salt -- to taste
1/2 teaspoon pepper
2 tablespoons finely chopped fresh parsley

Bake zucchini in oven until soft; then peel and mash. Add remaining
ingredients, except parsley, and mix thoroughly. Place on a serving
platter and chill at least one hour.

Garnish with parsley and serve.

Serves 6 to 8.
