Arabian Gulf Tamarind Hummus - Hummus bi Tamar Hindi

2 cups cooked chickpeas -- canned and drained, or homemade
3 tablespoons tahini
1 tablespoon tamarind paste
1 tablespoon finely chopped fresh ginger
salt and pepper to taste
1 tablespoon finely chopped fresh cilantro
1 tablespoon olive oil

Place all ingredients, except cilantro and oil, in a food processor and
process into a somewhat thick paste, adding a little water as necessary.
Place on a serving platter and sprinkle with cilantro and oil just before
serving.

Serves 6 - 8.

This dish is similar to the usual hummus bi taheena, but with an Indian
influence.

In North America, tamarind is available dried and pressed into one-pound
bricks or as a paste. When purchased in bricks, the tamarind must be cut
into small pieces and soaked overnight in twice as much water. The soaked
tamarind with the juice is then repeatedly rubbed through a fine strainer
until only seeds and fibrous material remain. (Those thick leftovers can
be discarded or utilized to polish brass!) Four parts of the pulpy juice
are equal to one of the paste.

The paste is much easier to use and, hence, tamarind is usually purchased
in this form. Tamarind can be found in specialty food shops, Middle
Eastern and Chinese stores, Indian markets under the name imli, and in
some Spanish groceries where it is called tamarindo.
