Palestinian Tahini Mixed Salad - Salatat Taheena

5 medium tomatoes -- finely diced
1 medium cucumber -- finely diced
1/2 cup finely chopped fresh parsley
3 tablespoons tahini -- (sesame seed paste or butter)
1/4 cup lemon juice
4 cloves garlic -- crushed
salt -- to taste
1 tablespoon dried mint

Combine tomatoes, cucumber, and parsley in a serving bowl; set aside.

In another bowl, thoruoughly mix the tahini with the lemon juice, and set
aside.

Mash garlic iwth salt; then stir into tahini-lemon juice mixture. Add to
vegetalbes and toss; then garnish with dried mint and serve.

Serves 4 - 6.
