Tunisian Semolina Soup - Sadirr

4 tablespoons olive oil
1/2 head garlic -- peeled and crushed
6 cups water
2 tablespoons tomato paste
4 tablespoons chopped fresh parsley
1 teaspoon hreesa -- or some other hot pepper paste or sauce
1 tablespoon dried mint
1 teaspoon ground caraway seeds
1 teaspoon paprika
1 tablespoon pickled capers
1 Preserved Lemon -- chopped
salt and freshly ground pepper to taste
1/2 cup semolina

Heat oil in a saucepan and saute garlic for a few minutes until it begins
to brown. Stir in remaining ingredients, except semolina, and bring to
boil. Cover and cook over medium heat for 15 minutes. Stir in semolina a
little at a time. Then, stirring constantly, bring to boil. Cook for 10
minutes or until semolina is well done; serve piping hot.

Serves 6 to 8.

Hreesa - Tunisian Red Pepper Spice Paste
2 tablespoons ground caraway seeds
5 garlic cloves, crushed
1/2 cup ground fresh cayenne
1/4 cup cumin
2 tablespoons salt
1/2 cup olive oil

IN a bowl, thoroughly mix all ingredients. Store in a jar with a tight
fitting lid in a cool place, to use as needed.

Makes about 1 1/2 cups (24 one-tablespoon servings).

Unlike most Middle Eastern and North African foods, the food of Tunisia is
noted for its spicy hotness. It is said that a husband will judge his wife
by the amount of hreesa she uses to prepare his food. Some even believe
that if a wife's cooking becomes bland, it means her love for her husband
is fading. On the other hand, when food is prepared for visitors, the
amount of hreesa is decreased to suit the more delicate palates of the
guests.
