Arabian Gulf Yogurt Ginger Spread - Laban ma'Zanjabeel

1 cup plain yogurt
4 tablespoons pulverized almonds
2 tablespoons finely chopped green onions
2 tablespoons finely chopped fresh parsley
1 tablespoon finely grated fresh ginger
1 tablespoon olive oil
1 clove garlic -- crushed
1/8 teaspoon cayenne
salt and freshly ground pepper to taste
1 small tomato -- finely chopped

Thoroughly combine all ingredients, except tomato, in a mixing bowl. Place
in a serving dish; garnish with tomato and serve with pita bread and
crackers.

Serves 4.
