International Meat Pastry Filling

1 (to 2) garlic cloves
1/4 medium onion -- finely chopped
1 teaspoon dried oregano -- or 1 tablespoon chopped fresh
1 teaspoon cumin
salt and pepper -- to taste
1 pound ground beef
1 tablespoon olive oil -- or vegetable oil
1/2 cup tomato puree -- or sauce

In a medium glass bowl or plastic container, mix garlic, onion and spices into ground beef. Cook immediately or refrigerate for 1 or more hours. In a large skillet, heat oil and cook meat mixture until crumbled and well done. Add tomato puree or sauce, cover and simmer over low heat, stirring occasionally for 5 to 10 minutes. Remove from heat and allow to cool before filling pastry rounds. Bake as directed by dough recipe.

Makes about 2 cups.

It is difficult to say which nation may take credit for a blend of spices like this. Suffice it to say that it is a blend of the New and Old Worlds. Makes 12 large empanadas for picnic fare.
