Indian Meat filling for chapatis

1 tablespoon vegetable oil
1/4 cup lemon juice
1/4 medium onion -- finely chopped
2 teaspoons minced fresh garlic
1 teaspoon freshly grated ginger root
1 teaspoon black pepper
1/2 teaspoon salt
1/2 teaspoon dried red pepper flakes -- to 1 teaspoon, to taste
2 teaspoons paprika
1 pound ground meat
In a medium plastic or glass bowl, combine all ingredients except meat, mixing until well blended. Using your hands, blend meat into marinade mixture. Cover and refrigerate from 1 to several hours. Cook meat mixture in a large skillet, crumbling it as it cooks, until done. Spoon into chapati and top with slices of onions, tomatoes, hot peppers, and yogurt, or toppings of your choice.
Makes about 2 cups.
This recipe combines traditional Indian spicing with the ease of ground meat (lamb, beef, or turkey may be used). Serve wrapped in chapiti or parathas with slices of onion and tomatoes. Top with yogurt (seasoned or plain).
