Re: [Healthy_Recipes_For_Diabetic_Friends] Looking for a good recipe for stuffed mushrooms

this is the recipe that I make for hubby

24 1 1/2 to 2 inch fresh mushrooms
14 cup finely chopped green onion
1 tablespoon butter
1/4 cup finely diced salami
2/3 cup finely diced monterey jack cheese

twist off mushroom stems and chop finely. Saute with green onion in butter.
Col slightly. Mix in salami and monterey jack cheese. Stuff into mushroom
crowns. Place in shallow pan. Bake in hot oven 425 degrees 6 to 8 minutes.
Serve hot. Makes 24 appetizers

You can sub ham, peperoni, various lunch meats and what ever kind of cheese
you would like. I have even ran a jalepeno through the food processor and
added that. Sorry the cookbook didnt have nutritional values
