Slow Cooker Artichokes - 18.7g Carbs, 7.2g Fiber, 2.8g Sugar

Love the artichoke hate having to wait for them to cook...this way
I can have them ready when I get home from work, Dip in butter and go.
Time: 480 minutes
Serves: 4

4 medium sized artichokes
1 cup lemon juice, fresh -divided use
2 cups hot water
1 stick unsalted butter, melted

Wash and trim the artichokes. Cut off about 1 inch off the top. Snip
the ends of the leaves. Stand artichokes upright in slow cooker.
Sprinkle each choke with 1/2 tsp of salt and 2 tbsp of lemon juice.
Pour 2 cups of hot water around the bottom of the chokes. Cover and
cook on low 8 hours.

Serve with melted butter and lemon juice for dipping.
