I tried one yesterday from The Pioneer Woman. It's called "French Onion Stuffed Mushrooms". Sauté onions, add red wine, beef broth, and Worcestershire sauce, cook until liquid is evaporated, put into browned mushroom caps, top with grated Swiss cheese, and bake until cheese is melted. I don't know the nutritional values, but they should be very low carb...I do know they were delicious.
