Finnish Root Soup

2 tablespoons olive oil
1 medium onion -- chopped
3 medium parsnip -- peeled and sliced
4 medium carrots -- to 4, peeled and sliced
1 sweet potato -- peeled and sliced
1 ripe pear -- peeled, seeded and chopped
3 1/2 cups broth
1/2 cup white wine -- apple cider, or apple juice
1 teaspoon freshly ground black pepper
1/4 teaspoon ground cloves
1/4 teaspoon nutmeg
1/4 teaspoon ground ginger
1/4 teaspoon ground cumin
In a large stockpot, warm the olive oil over medium-high heat. Add the onion, parsnips, carrots, sweet potato, and pear and saute for 10 to 15 minutes. Add the broth, 2 cups water, wine and spices. Simmer for 20 minutes. set aside to cool for 10 minutes, then puree in a blender or food processor until smooth, in batches. Return to the pot and reheat.
Makes 6 servings.
