Farmers Almanac Graham Cracker Crust

2 cups graham cracker crumbs
2 tablespoons sugar -- to 4 tablespoons
1/4 teaspoon cinnamon -- nutmeg, or ground ginger, or 1/2 teaspoon grated lemon or grated orange zest (optional)
1/3 cup unsalted butter -- melted
Preheat the oven to 375F. Butter the bottom only of a 9-inch pie plate.
In a mixing bowl, combine the crumbs and sugar (and optional flavoring, if desired).
Pour the melted butter over the crumb mixture and work with your fingers to coat until the crumbs begin to hold together.
Distribute the graham cracker mixture into the prepared plate and gently and evenly press the mixture over the bottom an up the sides of the plate. Neatly finish off the rim.
Bake for 8 minutes or until the edge is just light brown. Cool before filling.
Makes one 9-inch pie crust.
This pie crust may be frozen unbaked or used unbaked if it is thoroughly chilled before filling. Use this crust for any cream, chiffon, or cheese pie.
