I'd point out that Stefansson, and the Inuit, didn't eat "all meat". It was largely fish, which is a different thing. In a couple of respects:
1. The Inuit (and most non-farming cultures) tend to eat small fish, whole. This means they also eat the stomach contents (algae, seaweed, etc) and the bones. This provides calcium and vitamins. Modern Americans, when they eat "all meat" mainly eat beef or chicken muscle meat, which is lacking in green anything and also lacking in calcium.
2. The Neanderthals, who also are said to eat a "mostly meat" diet, ate a lot of seafood also. Plus stuff like insects and snails. Again, this tends to include the stomach contents and bones.
3. Modern "low carb" people tend to eat cheese and milk and eggs, which are more or less whole foods also.
I do know you can raise healthy rats off nothing but eggs, and some humans live off mostly milk. I think you can live off whole fish too.

One of the women would pinch them every now and then until, when she found her finger indented them slightly, she would begin preparations for breakfast. First she cut off the head and put them aside to be boiled for the children in the afternoon (Eskimos are fond of children, and heads are considered the best part of the fish). Next best are the tails, which are cut off and saved for the children also. The woman would then slit the skin along the back and also along the belly and getting hold with her teeth, would strip the fish somewhat as we peel a banana, only sideways where we peel bananas, endways."
BTW in the 1800's and early 1900's, English people ate whole little birds too. The nutritional value of a whole sparrow or blackbird is just not the same as that of a chicken thigh.
Anyway, this is just to say that the whole issue is more nuanced than just carb content. I'm not sure what the "ideal human diet" is either, but it's unlikely to be "pure meat" in the sense of animal muscle: there are too many known dietary factors lacking.
