Buy frozen vegetables and canned vegetables. Contrary to popular belief they contain almost the same level of nutritents as fresh produce, because they are canned and frozen as soon as they're picked. The nutrient level difference is only slight. Just make sure to rinse canned vegetables off before using to remove salt used in the canning process. And, generally, canned vegetables are already cooked so they only need to be heated. Follow heating/cooking directions on frozen vegetables package.

I live alone, and a lot of fresh vegetables are sold in bunches, I can't eat the whole bunch by myself.
And I hate to throw out food also. My family did lecture me about starving children, forced me to clean my plate, etc.
