Very Special Spinach - 11g Carbs, 3g Fiber, 3g Sugar

Servings: 8
3 (10 oz) boxes frozen spinach, thawed and drained
2 cups low-fat (1%) cottage cheese
1 1/2 cups grated fat-free Cheddar cheese
3 eggs
1/4 cup flour
4 Tbsp (1/4 cup) light, soft tub margarine, melted
Mix together all ingredients.
Pour into slow cooker. Cook on HIGH 1 hour.
Reduce heat to LOW and cook 4 more hours.
