Turkey Chili
1 pound lean ground turkey
2 frest tomatoes, dices
1 cup diced onion
2 cloves garlic, finely chopped
2 16-ounce cans kidney, pinto or black beans, drained and rinsed
2 1/2 cups salsa
1 16-ounce can corn
1 4-ounce can diced green chilies
2 tsps. chili powder
1/2 tsp. crushed dried oregano
1/2 tsp. ground cumin
1/2 cup of shredded mild cheddar or Monterey jack cheese
Cook turkey, onion and garlic in large skillet until turkey is browned; drain.
Stir in beans, tomatoes, corn, salsa, chilies, chili powder, oregano and cumin.
Bring to a boil. Reduce heat to low; cover. Cook, stirring frequently, for 20 to 25 minutes.
Sprinkle shredded cheese on top before serving. (Serve with cornbread)
Makes 12 servings.
