Butter Bean Pate

1 can butter beans
2 tablespoons olive oil
1 teaspoon dijon mustard
2 tablespoons parsley
1 1/4 cups vegetable stock
Drain butter beans.
Put in small saucepan with veg stock and bring to boil, then simmer for 10-15mins.
Drain keeping some stock.
Put in a bowl with olive oil and dijon mustard and mash with a fork. Then add parsley. Add more stock if too dry.
Serve with bread or crackers.
Serve 6-8 (approx 1/4 cup per serving)
Prep time: 20 mins
Variation: Add pepper, chilli or any other preffered herb or spice for your own touch.
You can use it as a dip at partys, or as a filling snack any time of the day!
