Mediterranean Halibut - 3g Carbs, 0g Fiber

Prep Time: 10 minutes
Cook Time: 5-7 minutes

1/2 cup chopped tomatoes
2 Tbsp crumbed reduced-fat feta cheese
4 tsp capers
4 tsp chopped fresh basil, divided
2 tsp balsamic vinegar
1 (12 ounce) package frozen halibut fillets, thawed
4 tsp extra virgin olive oil
2 tsp minced garlic

In a small bowl, combine tomatoes, feta cheese, capers, 1 teaspoon basil
and vinegar; set aside.

Pat fish dry with paper towels. Preheat grill to medium-high heat.
Combine olive oil, garlic and remaining basil. Rub both sides of fish
with oil mixture. Grill fish, turning once, until fish flakes easily
with a fork (about 5-7 minutes). Top grilled fish with tomato mixture.
