Grilled Salsa Chicken - 20g Carbs, 0g Fiber

Prep Time: 5 minutes plus marinating
Cook Time: 15-20 minutes

4 boneless, skinless chicken breasts
Dash salt
Dash black pepper
1/2 tsp chili powder
1/2 cup salsa
1/3 cup peach or apricot preserves
1 Tbsp fresh squeezed lemon juice

Preheat grill to medium heat.

Lightly season chicken breasts with salt, pepper and chili powder.
Place chicken on grill and cook to an internal temperature of
170 degrees F (about 15-20 minutes), turning once.

Meanwhile, in a small bowl, combine remaining ingredients. Generously
brush both sides of chicken with salsa mixture during the last
5 minutes of cooking.

Servings: 4
