Frozen Soy Cappuccino

1/4 cup sugar
1 cup hot espresso -- or strong brewed coffee
1 1/2 cups soy milk -- or other dairy-free milk
1 1/2 cups ice cubes
In a heatproof bowl, combine the sugar and the hot espresso, stirring to dissolve. Refrigerate the espresso mixture until chilled, 2 hours.
In a blender, combine the espresso mixture, soy milk, and ice cubes and blend until smooth. Serve immediately.
Serves 2.
It's wonderful that many boutique coffee shops now include soy milk as an option for their blended coffee drinks - but they're still expensive. Save some cash and make them at home.
