Here is a "healthy" and very delicious chocolate syrup and/or mousse recipe: Pleease no SPLENDA! That's one of the most toxic chemical laboratory sweetener!
Basic real raw chocolate:
1 1/2 cup raw organic coconut oil (mildly melted in a warm water bath)
1 cup raw organic cacao powder (raw does not taste bitter)
1 cup raw agave nectar (or to desire) or Stevia
1 oz. espresso
or cut the recipe in 1/2, if too much.
Put oil in a food processor, add raw cacao powder and agave or stevia
and mix to a smooth almost liquid "pudding" consistency. If too liquid, add more cacao, if too creamy, add more coconut oil.
Then add the espresso, it gives the chocolate a little flavor kick
without recognizing the coffee flavor.
Chocolate sauce (or syrup):
Add 1 cup cold pressed avocado oil
and eventually more agave or stevia
to the mixture above.
The avocado oil prevents the chocolate from harden.
Of course you can use any other cold pressed oils,
but avocado is more neutral in flavor without changing
the flavor of chocolate.
Chocolate mousse:
Prepare the basic raw chocolate
and remove from the food processor.
2-3 medium size avocados
Cut avocados in half, remove the pits,
scoop the flesh out with a table spoon and
add to the food processor. Mix to a smooth
silky cream. Then add the basic chocolate
mixture and mix again to a cream.
This is one of the best tasting healthiest
chocolate mousse you've ever tasted!
You can dig in without any guilt.
The basic chocolate will harden in the fridge
and can be melted in a warm water bath.
It keeps for about 12 days.
The syrup will last about 2 weeks or longer
The chocolate mousse will also harden a little
in the fridge and is quickly melted in a warm
water bath as well. The mousse will last about
10 days.
I am a nutritionist and recipe developer and have
served this recipes to many people with diabetes.
They loved it so much that they never liked regular
chemical chocolate anymore.
