Baked Artichokes with Parmesan Cheese - 12g Carbs, 8.2g Fiber, 0.3g Sugar

A great appetizer with artichokes and Parmesan cheese.

18 oz frozen artichokes hearts
1 Tbsp fresh lemon juice
3 Tbsp chopped pecans, ground
2 Tbsp grated Parmesan cheese
1 tsp Italian seasoning, crushed
1 medium garlic cloves, minced
1 tsp extra virgin olive oil
1. Preheat oven to 375 degrees F.
2. Lightly coat 9" glass pie plate with cooking spray.
3. Place artichokes in colander and rinse well with cold water to
separate.
4. Drain well, pat dry with paper towels. Place in prepared pie
plate and sprinkle with lemon juice.
5. In small bowl, combine pecans, cheese, Italian seasoning, garlic,
and oil. Sprinkle mixture evenly over artichokes
6. Bake 15 minutes, or until topping is golden brown.
Additional Information - -
Serve with low-carb, whole-grain chips or veggie dippers.
