1/3 cup sweet paprika
2 tablespoons ground cumin
2 tablespoons ground coriander
1 tablespoon freshly ground black pepper
1 tablespoon ground fennel
Mix the spice thoroughly and store in a jar for up to 3 months.
Makes 4 ounces (about 12 one-tablespoon servings).
The addition of fennel seeds and lemony coriander makes this blend particularly well suited to fish dishes, especially those using crustaceans. Mix it with flour and use it to dust pieces of fish for pan-frying or grilling. Its slight curry flavor also lends itself to egg dishes, legumes and vegetables, even pilafs.
